A question about adoption, (would I be able to be an adoptive parent)?

Unfortunately because there are so many married couples wanting to adopt, I think that you would be towards the bottom of the list, regardless how stable you are or whether or not you would be a great parent. Preference is usually given to married couples. You could try foster care though. There are heaps of kids who need someone stable in their lives and you don't need to be married to be a foster parent. Good luck!
